5 days in China: one city, done properly
Five days sounds like a short trip. It is actually a very good one, if you accept the rule: one city, no internal flights, and one morning that starts before breakfast.
The two shapes that work

Why not two cities
A domestic flight costs you half a day: two hours at the airport, one hour flying, one hour at the other end. Two cities in five days means both are seen in a hurry, and the day you remember is the one in the airport.
Five days is the trip where “one thing done well” beats “three things done badly”. It is also the cheapest way to see China properly.

Shanghai in five days
Two full Shanghai days, one day trip to Suzhou or Hangzhou, one arrival day, one departure. It works because both water towns are under an hour by rail — see from Shanghai.
What five days costs you
You will not see the Terracotta Army, the pandas or the karst scenery. If those matter, you need seven days minimum — and the honest version of that is the 7-day plan.
Is 5 days worth the flight?
If you are combining China with another country in Asia, yes. As a standalone long-haul trip, seven days is better value.
Can we add Xi’an?
Only by cutting Beijing to two nights, which leaves you one wall day and no city. We do not recommend it.
Which city for a first visit?
Beijing. The wall and the Forbidden City are why people come.
Can we do a day trip from Beijing?
Yes — the wall is the day trip. Anything else and you are choosing quantity over quality.
